Horovats, baked vegetable caviar

In general, the word khorovats in Armenia is called barbecue. But at the same time and vegetables, which are cooked next to the kebab, on the coals. This caviar (or salad, whatever you call it) has a delicious haze scent!

Ingredients
  • 4 large eggplants
  • 4 large bell peppers
  • 1 red sweet onion
  • 2 cloves of garlic
  • 1 small bunch of cilantro
  • juice of 1 lemon
  • vegetable oil
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
If you are cooking outdoors, charcoal the vegetables when the coals are still fresh and open fire. Put the grill on the grill, vegetables on it and fry, turning, until black on all sides. Put the vegetables prepared in this way in a plastic bag, twist and leave for 10 minutes.
Step 2
If you are cooking at home, turn on all the burners on the stove and place the eggplants and peppers directly on the gas or electric burner. Burn the vegetables until the skins are charred by turning them over. Alternatively, bake under a grill in an oven preheated to maximum temperature until their skins are charred. Immerse the finished vegetables in cold salted water.
Step 3
Peel the aubergines and peppers, remove the stems and seeds from the peppers, chop the pulp coarsely and place in a bowl.
Step 4
Chop the onion finely. Remove tough stems from greens. Chop the garlic and herbs with a knife, add to the eggplants and peppers along with onions, salt, pepper and mix.
Step 5
Season the caviar with lemon juice and vegetable oil and serve.
