STEP-BY-STEP COOKING RECIPE

Step 1
Place the carcass upright and cut off the belly with a chef's knife.
Step 2
Put the carcass on. Place the chef's knife in the plane of the table just above the spine. Holding the fish on top with your palm, cut off the top fillet. You still have rib bones on it.
Step 3
There is a dark line in the middle of the fillet. There are bones in it, they need to be cut out. To do this, make two parallel cuts on the sides of this strip, stepping back 2 mm. Remove the strip.
Step 4
Now again, with the chef's knife, cut off the spine from the second piece of fish, putting the knife under it. Press the fish with your other hand, and press the knife to the spine.
Step 5
Pick up the edge of the skin with a knife and, gently pulling in the other direction, remove it. Cut the fillets into easy-to-eat slices.
