Meat broth with porcini mushrooms and turkey meatballs
Ingredients
- 800 g sugar beef and veal bones
- 3 small onions
- 2 small carrots
- half a celery tuber
- 1.5 kg turkey (thighs and breast with bones)
- 10-12 porcini mushrooms, can be frozen
- 50 g butter
- 40-50 g flour
- 6-8 peas of black pepper
- 150-200 g of turkey liver
- odorless vegetable oil
- 60-70 g kidney fat
- 2 eggs
- 2-3 yolks
- 50-70 ml cream with fat content from 30%
- a pinch of grated nutmeg
- 250-300 g of stale butter
- 3-4 sprigs of dill and parsley

STEP-BY-STEP COOKING RECIPE
Step 1
Coarsely chop the meat bones. Sprinkle the carrots and 2 onions without cutting into pieces, sprinkle with vegetable oil and bake in the oven at 200 ° C, 20-30 minutes.
Step 2
Cut the celery into large cubes. Put prepared ingredients in a saucepan and pour 2.5-3 liters of salted cold water. Bring to a boil and simmer over medium heat for 1 hour 30 minutes.
Step 3
Cut off the turkey fillet. Add the skeleton to the pan and cook for 1 hour, removing the foam. If the water boils away strongly, add some more hot water.
Step 4
Turkey liver and turkey fillet, cut in medium pieces, fry in vegetable oil, 2-3 minutes. Cool it down. Grind in a blender along with kidney fat. Transfer the mixture to a bowl.
Step 5
Add the remaining melted butter and all the eggs and cream to the turkey. Season with salt and nutmeg. Grate stale bread on a fine grater. Add enough to form a thick minced meat, from which form meatballs the size of large cherries. Fry with vegetable oil until tender and crisp.
Step 6
Cut the porcini mushrooms into medium cubes and fry together with the onion, cut into strips and 30 g butter, 4-5 minutes. Add flour and black pepper. Stir.
Step 7
Pour 150-200 ml of broth. Strain and add to the skillet. Stir.
Step 8
Strain the rest of the broth. Remove bones and vegetables. Return the stock to a clean saucepan. Add the contents of the pan. Boil for 5 minutes. Add the meatballs. Boil for 2-3 minutes and serve hot along with finely chopped herbs.
