Muffins with potatoes, cheese and herbs
Muffins can be not only a dessert, but also an appetizer. Like, for example, these potato muffins with cheese and herbs. And you can cook them not only for breakfast.
Ingredients
- 120 g of any spicy cheese
- 1 large bunch of different greens of your choice (parsley, cilantro, dill, green onions)
- 2 eggs
- 80 g sour cream
- 500 g mashed potatoes
- oil for lubricating molds (if using metal ones)
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Grate the cheese on a coarse grater. Remove coarse stems from greens, finely chop the rest.
Step 2
Whisk eggs with sour cream, salt and pepper. Add the herbs and cheese to the egg mixture and mix well.
Step 3
Mash the puree until smooth, if there are lumps in it. Add mashed potatoes to the cheese mixture and knead the dough.
Step 4
If using metal or ceramic muffin pans, oil them. Pour the dough into muffin tins, filling them almost to the brim.
Step 5
Bake muffins in an oven preheated to 190 ° C for 20-25 minutes. serve with sour cream.
