Pelnyan Udmurt
Pelnyan is a traditional Udmurt dish, which was previously prepared for big holidays and served to the most dear guests. Translated from Udmurt, pelnyan means "ear of bread". It is prepared from three types of meat, and to give the filling more juiciness, the "ear" of the dumpling from one end is always left open. Dumplings are served with tomato sauce, herbs, sour cream, mayonnaise or horseradish.
Ingredients
- water - 200 g
- egg - 100 g
- salt - 10 g
- rye flour - 150 g
- wheat flour - 420 g
- beef b / c - 500 g
- lamb b / c - 300 g
- pork shoulder b / c - 300 g
- lard - 100 g
- peeled onions - 300 g
- salt - 10 g
- freshly ground black pepper - 4 g
STEP-BY-STEP COOKING RECIPE
Step 1
Cooking the dough. Combine water, egg, salt and flour in a bowl. We knead the dough. Transfer the finished dough into a polyethylene bag and leave for 10-15 minutes.
Step 2
We roll out the dough into a large thin layer and cut out circles with a glass or a mold similar in diameter.
Step 3
Put the minced meat in the center of each mug, pinch the edges and give the dumpling the shape of an ear. Be sure to leave a hole on one edge - for a rich broth.
Step 4
Dip in boiling salted water and cook until the dumplings float. Serve hot with any sauce.
