Sultan kebab

Sultan Kebab with Chicken is a chicken with vegetables baked in a crispy yufka with an appetizing cap made of delicate creamy béchamel sauce and cheese. Portion kebab - everyone will get a flaky crunchy bottom, soaked in juice from a vegetable stew with chicken breast, and a cheese crust hat.

  • dry thyme 1.3 tsp
  • paprika 1.3 tsp.
  • parsley 1 bunch (s)
  • wheat flour 430 g
  • salt 1 tsp
  • vinegar 1 tsp
  • water 200 ml
  • butter 50 g
  • milk 2.5 glass (s)
  • nutmeg 0.4 tsp
  • ground black pepper 2 pinch (s)
  • cheese 250 g

STEP-BY-STEP COOKING RECIPE

Step 1
First, let's prepare the yufka dough. Sift 400 grams of flour, add 1.2 tsp. salt and 200 ml of water at room temperature with 1 tsp. vinegar. Knead an elastic dough that does not stick to your hands. Knead well for 10 minutes and leave for 1 hour, covered with a towel.
Step 2
Divide the finished dough into 6-8 parts and roll it out in the shape of a circle on a table with flour. The dough is elastic and rolls out quite thinly. We put the resulting cakes on top of each other.
Step 3
We wash the vegetables, cut them into approximately equal cubes. Pat the chicken dry with a paper towel and cut into cubes. Fry the onions and carrots in hot oil, add the chicken after 5-7 minutes. When the chicken turns white, add vegetables and garlic. After 5 minutes, add tomato paste, spices and a little water. Simmer for about 7-9 minutes. Season to taste. When ready, mix with parsley.
Step 4
Let's make bechamel. It should have the consistency of thick sour cream. Melt 50 grams of butter, add 2-3 tbsp. flour and fry, stirring with a spatula, until golden brown. After that, pour in 2.5 cups of milk and stir thoroughly so that there are no lumps. When the sauce thickens, add the nutmeg, salt and pepper.
Step 5
We form a kebab. Grease a deep bowl with vegetable oil. We lay out the sheet of the yufka so that there are many folds and the ends hang down, you can add a couple more layers of the yufka to the bottom. We spread the chicken with vegetables and cover with the hanging edges of the yufka. Turn the kebab over in the palm of your hand, put it in a greased dish or on a baking sheet. If suddenly your dough breaks out, take a piece of dough and patch it up by moistening the edges with water.
