Potato cutlets with fried onions
Ingredients
  • 700-800 g potatoes
  • 3 medium onions
  • 1 egg
  • 2 yolks
  • 25 g fat sour cream
  • melted butter
  • salt, freshly ground black pepper
  • delicious bread crumbs
  • sour cream for serving
  • 500 g butter

STEP-BY-STEP COOKING RECIPE

Step 1
Set aside 1 large or 2 small potatoes. Peel the rest of the potatoes, place in a wide saucepan, cover with boiling water, bring to a boil over medium heat, season with salt and cook, covered, until the potatoes are completely soft, about 25 minutes.
Step 2
Peel the onion, cut into thin rings. Sprinkle it with breadcrumbs, shake off excess. In a large skillet with high sides, heat the ghee at least 1 cm thick. Saute the onion in portions over high heat until golden brown. Put the finished onion on crumpled paper towels.
Step 3
Peel and grate the set potatoes. Pour the grated potatoes with the remaining from frying the onions (3-4 tablespoons), add sour cream and mix thoroughly.
Step 4
Drain the boiled potatoes, crush them into mashed potatoes and mix with the potato-sour cream mass. Salt, pepper, cool.
Step 5
When the potato mass has completely cooled, add the egg beaten with the yolks and mix thoroughly. Soaking your hands in water, make round cutlets with a diameter of about 7 cm and a thickness of 1.5-2 cm. Dip each cutlet in breadcrumbs and fry in ghee over low heat until golden brown on all sides. Serve with fried onions and sour cream.
