Quick Strawberry Cake

This is a delicious cake that you can make in less than half an hour. With a recipe like this, your guests will never catch you off guard.

Quick Strawberry Cake
Ingredients
  • 250 g cream cheese
  • 3-4 st. l. powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp. l. lemon juice
  • 200 ml heavy cream
  • 500 g strawberries
  • 3 tbsp. l. strawberry jam (without berries)
  • 150 g butter
  • 250 g shortbread cookies

STEP-BY-STEP COOKING RECIPE

Step 1
Melt the butter for the base. Grind the cookies into small crumbs in a food processor, add oil and stir. Place in a 22 cm dish and tamp with a glass. Cover with cling film and place in the freezer for 15 minutes.
Step 2
Use an electric mixer to whisk the cream cheese with powdered sugar, vanilla extract and lemon juice.
Step 3
In another bowl, beat the cream until soft peaks. Gently combine the cream cheese and cream with a spatula.
Step 4
Cut the strawberries into 4 pieces. Heat the jam if desired and stir in half the berries. Boil for 1 minute.
Step 5
Remove the cake base from the freezer and fill with the creamy filling. Then add jam or boiled berries with jam. Remaining berries on top. Serve immediately or refrigerate for 2-3 hours.
