Spicy quince and chili seasoning
Ingredients
- 1 large quince or 2 small
- 4 red chili peppers
- 5 cm fresh ginger root
- 70 g each sugar and red wine vinegar
- 1 tbsp salt
STEP-BY-STEP COOKING RECIPE
Step 1
Wash the quince with a brush and cook whole in boiling water, 25 minutes. Cool, cut in half, remove the core, cut the pulp into 1.5 cm cubes. Save 150 ml of the broth.
Step 2
Peel and chop the chili and ginger (remove the seeds and partitions from the chili or leave if you like very spicy).
Step 3
In a saucepan, combine chili, ginger, sugar, salt, vinegar and quince decoction. Bring to a boil, cook over medium heat for 10 minutes.
Step 4
Add quince and cook, stirring occasionally, until thickened, 15 minutes. Cool it down. Serve with oily fish and poultry.
