Stracciatella soup

It seems to us that this is the simplest soup in the world - it is prepared in a matter of minutes, and there are products for it in every home. At the same time, it is amazingly tasty - it was not for nothing that it was invented in Italy, they understand good food there.

Stracciatella soup
Ingredients
  • 1 liter chicken broth
  • 3 eggs
  • 4 tbsp. l. with a heap of grated parmesan
  • 2 tbsp. l. semolina
  • a pinch of ground nutmeg
  • parsley for serving
  • salt, freshly ground black pepper

STEP-BY-STEP COOKING RECIPE

Step 1
1. Put a pot of broth on fire and heat slightly.
Step 2
2. Whisk the eggs lightly in a bowl, add the parmesan and semolina, season with salt and pepper and add a pinch of nutmeg.
Step 3
3. Dilute the mixture with a ladle of warm broth and mix well.
Step 4
4. Bring the remaining stock to a boil and slowly add the egg mixture, stirring with a whisk to prevent lumps from forming. Cook for 3-4 minutes, until the soup thickens.
Step 5
5. Separate the parsley leaves and chop finely. Sprinkle parsley over the finished soup and serve immediately.
