Thick soup with vegetables and beef

Thick soup with vegetables and beef
  • beef 500 g
  • young zucchini 1 pc.
  • carrots 1 pc.
  • onion 1 pc.
  • potatoes 5 pcs.
  • water 1 liter
  • sugar 2 tsp.
  • tomato paste 70 g
  • pepper, salt to taste


Step 1
Cut the beef into small pieces (strips) and fry over the fire for 5-7 minutes.
Step 2
Then fill it with boiling water so that the water barely covers the meat, and simmer for 30 minutes (with the lid closed). Salt and pepper to taste.
Step 3
Cut the carrots into small cubes. And after the meat has stewed, add it to the beef. Simmer everything together for another 10 minutes.
Step 4
Chop the onion finely. Also add to meat and simmer for 10 minutes. If necessary, add water during cooking.
Step 5
Now we proceed to potatoes and zucchini. Three potatoes on a grater, and cut the rest into cubes. We also cut the young zucchini into cubes.
Step 6
We put everything that was cooked in our frying pan into a deep saucepan. And then we add zucchini and potatoes to this, 2-3 tbsp. l. tomato paste and pour in at least 2 cups of water. Salt, pepper and leave to simmer for 20-25 minutes.
Step 7
After this time, we try the potatoes for readiness. If it is ready, then add 2 tsp. sugar, alter everything and let the soup brew for 20 minutes.
Step 8
Sprinkle with fresh herbs when serving.
