Cake Significant Red Velvet
It's hard to find someone who doesn't know this truly impressive cake. And it is significant in that it impresses on several points at once: it has a unique vanilla-chocolate taste, while the aroma of cocoa is not obtrusive, but light and gentle, like a young maiden; it is charmingly beautiful both externally and in section, while it does not require any unearthly decorations in the form of chocolate drips, fresh berries or flowers, and perfect work on leveling the cream is also not required (this is absolute happiness for those nervous like me); and of course, what captivates without a trace is the simplicity of preparation!
- 100 g of proteins (the average weight of protein from a chicken egg is 30 g - but the weight fluctuates up to 40 g, so it is better to take in grams, and not in pieces);
- 2 tbsp water;
- 15 g vanilla sugar;
- 222 g sifted flour;
- 160 g of sugar;
- 2 sachets of baking powder (yes, two);
- 1.5 tsp cocoa (if there is red cocoa, the color will be amazing);
- 1/2 tsp salts;
- 65 g of vegetable oil;
- 65 g butter at room temperature;
- 133 g of kefir;
- red gel dye (or powder - dilute in water indicated at the beginning of the list) enough to achieve the desired color;
- for cream:
- 120 g cream, 35% fat;
- 500 g cream cheese;
- 50 g of sugar;
- vanilla optional.
