Crispy marinated zucchini

Zucchini goes well with vegetables, meat, fish, poultry and dairy products. It can be eaten raw, pickled, stewed, baked ... Especially young and crunchy.

Crispy marinated zucchini
Ingredients
  • 500 g zucchini
  • 3 shallots
  • 2 tbsp. l. non-iodized salt
  • ice cubes
  • 500 ml apple cider vinegar
  • 140 g of brown sugar
  • 1 tsp mustard with grains
  • half a dried pod of chili pepper
  • 1 tsp ground turmeric
  • 1 tsp mustard seeds, optional
  • 1 tsp celery seed, optional

STEP-BY-STEP COOKING RECIPE

Step 1
Zucchini, without peeling, cut into thin slices. Finely chop the onion. In a large bowl, combine prepared ingredients with salt. Add ice cubes. Cover the bowl with a smaller plate or lid. Set the oppression and leave for 1 hour.
Step 2
Drain the bowl. Blot the zucchini with a cotton towel to remove excess brine.
Step 3
Combine all marinade ingredients in a saucepan and bring to a boil. Cook for 3 minutes. The sugar should be completely dissolved. Remove marinade from heat and cool to 40 ° C. Add the courgettes and stir.
Step 4
Prepare 2 jars of 500 ml. Spread zucchini on them, fill with marinade. It should completely cover the vegetables. Seal and refrigerate. Zucchini can be stored for 1–2 months and served with pork or white fish.
