Green cheese waffles with spinach and poached egg

Who doesn't love waffles ?! Especially the Belgian ones. Unless people who are not particularly fond of sweets. But there is a wonderful recipe for unsweetened waffles for them. This is no longer a dessert, but an original sandwich. Such things are very popular now in Europe. Are we worse?

Green cheese waffles with spinach and poached egg
Ingredients
  • 300 g flour
  • 4 large eggs
  • 400 ml of milk
  • 200 g cheddar
  • 70 g butter and a little more for serving
  • 0.5 tbsp. sugar
  • 0.5 tsp soda
  • 1 small bunch of green onions
  • vegetable oil
  • on the tip of a knife mustard powder and ground paprika
  • salt
  • freshly ground black pepper
  • spinach and poached eggs, for serving

STEP-BY-STEP COOKING RECIPE

Step 1
Separate the whites from the yolks, beat the whites with a pinch of salt into a persistent foam.
Step 2
Finely chop the onion and fry with 20 g of butter, 3 minutes.
Step 3
In a separate bowl, combine the sifted flour, baking soda, sugar, mustard powder, paprika and black pepper. Add coarse grated cheese, yolks, whisked until smooth, and the remaining melted butter. Stir. Pouring milk in a thin stream, continue kneading until the dough is smooth.
Step 4
Add the proteins in 3-4 passes, stirring the mixture from bottom to top. Using a waffle iron, bake the waffles, occasionally brushing them with vegetable oil. When all the waffles are done, gently transfer them to a baking sheet lined with baking paper. Bake in the oven at 180 C for 5 minutes.
Step 5
Serve with blanched spinach and poached eggs, top with a small piece of butter.
