Ingenious side dish of colorful vegetables
In this recipe, you can also use pumpkin, celery root, potatoes, that is, almost any vegetable that "stale" in the refrigerator. When you've got enough, make this bright and tasty side dish with them.
- 1-2 medium sized zucchini and / or eggplant
- 200 g tomatoes
- 2 bell peppers
- 5 tbsp. l. extra virgin olive oil
- 2 white onions
- 3-4 cloves of garlic (or to taste)
- salt pepper
- 2-3 sprigs of thyme
STEP-BY-STEP COOKING RECIPE
Cut all vegetables into rounds or slices about the same size.
Grease a large grill pan with olive oil and fry the vegetables in it on both sides until beautiful golden stripes (it is very convenient to use the function of combining the heating zone of two burners to fry vegetables faster and more evenly).
In another skillet, fry the chopped onion rings in olive oil until golden brown.
Arrange the vegetables in layers with a baking dish. Drizzle with olive oil, season with salt, pepper, sprinkle with thyme leaves and finely chopped garlic.
Send the form with vegetables to an oven preheated to 180 ° C for 30 minutes. Or bake them in automatic "vegetables" mode.
