Italian pie

This Italian pie is a kind of pizza, but with crumbly dough, delicate curd and cheese filling and ham.

Ingredients
  • 500 g dry fat cottage cheese
  • 2-3 tbsp. l. sour cream
  • 300 g ham
  • 300 g hard cheese
  • 1 tsp dried italian herbs
  • salt, freshly ground black pepper
  • additional 1 egg yolk for brushing
  • 4 cups flour
  • 350 g cold butter
  • 150 g sour cream
  • 1/2 cup sugar
  • 1/2 tsp salt

STEP-BY-STEP COOKING RECIPE

Step 1
Sift flour into the bowl of a food processor with a knife attachment, add salt, sugar and diced cold butter. Grind to a coarse crumb state, add sour cream and turn on the processor for another 3-4 seconds so that the dough gathers into a lump. Add 2 tbsp if needed. l. cold water.
Step 2
Transfer the dough to a work surface and knead quickly. Roll into a ball, wrap in plastic and refrigerate for 30 minutes.
Step 3
For the filling, beat the cottage cheese with a mixer with sour cream, add salt, pepper and dried herbs. Cut the ham into small cubes, grate the cheese on a coarse grater. Combine the curd filling with ham and cheese.
Step 4
Separate some of the dough for decoration, divide the rest into two unequal pieces. Roll out most of the dough into a 3 mm thick layer and place in a round shape with low sides, 30 cm in diameter, or another of similar volume. The ends of the dough should hang slightly.
Step 5
Place the filling over the dough and flatten.
Step 6
Roll out the remaining dough, place on the cake, pinch and prick with a fork. Brush the surface of the pie with yolk.
Step 7
Roll out the dough for decoration and cut out three long, thin strips. Weave them into a braid. Lay the braid along the side of the pie, brush with yolk.
Step 8
Preheat oven to 180 ° C. Place the pie in the oven and bake for 40-50 minutes. Serve warm or cool completely.
