Lentil Pasta
This is a great dish for a hearty lunch, the first and second in one plate. Do not be surprised at the proximity of pasta and lentils, for Italy it is familiar. And they know a lot about pasta!
Ingredients
- 350 g of a fine paste such as ditalini
- 200 g lentils
- 80 g of bacon
- 100 g mashed tomatoes
- 1 medium carrot
- 1 medium onion
- 2 celery stalks
- 1 liter vegetable broth or water
- 1 clove of garlic
- 1 sprig of rosemary
- 2 sprigs of thyme
- 1/2 tsp chili flakes
- grated parmesan for serving
- olive oil
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Add lentils, tomatoes, chili flakes, rosemary and thyme to a saucepan, add broth and bring to a boil. Reduce heat and cook lentils for about 40 minutes, until tender. Season with salt and pepper. Remove the rosemary and thyme sprigs.
Step 2
Bring the lentils to a boil again, add the pasta (add a little broth if necessary) and cook for about 10 minutes. Add the Parmesan, stir and serve immediately.
