Mackerel smoked in tea
Ingredients
  • 4 fillets of fresh mackerel
  • 75 g of salt
  • 75 g rice
  • 75 g of sugar demerara
  • 75 g dry tea (earl gray, lapsang sushong or jasmine)

STEP-BY-STEP COOKING RECIPE

Step 1
Place the fish in a small dish or tray, cover with salt and let sit for 10 minutes.
Step 2
Line the bottom of the pan - wok with foil, add rice, sugar and tea on top, stir.
Step 3
Rinse the salt off the fish gently and pat the mackerel dry with a paper towel. Place the fish on a small wire rack and place over the skillet so that it does not come into contact with the rice.
Step 4
Cover the fish with a lid or foil, turn on the hood to maximum and place the pan on medium heat for 10-12 minutes until the fish is well smoked.
