Ossetian pies have become more popular with us than khachapuri, they are baked in cookery and bakeries, but they often do not do it very well. Try making such a pie with your own hands! You can add beet leaves, spinach or herbs to the filling.

Ingredients
  • 300 g flour
  • 100 ml of milk
  • 30 g butter
  • 10 g fresh or 5 g dry yeast
  • 0.5 tsp sugar and salt
  • 4 medium potatoes
  • 100 g of Adyghe cheese
  • 2 tbsp. l. sour cream or whole milk
  • 40 g butter or ghee
  • salt
  • butter for lubrication

STEP-BY-STEP COOKING RECIPE

Step 1
For the dough, add 100 ml of warm water, yeast, salt and sugar to lukewarm milk, stir. Sift flour with a slide, make a depression in the middle, pour in the resulting liquid. Add melted and cooled butter. Season with salt and knead to a soft dough. Place in a warm place, cover and leave to rise for 1 hour.
Step 2
For the filling, wash the potatoes with a brush, place in a saucepan, cover with boiling water and cook until tender, 30 minutes. Then drain the water, peel the potatoes and mash until smooth.
Step 3
Mash the cheese separately and place in potatoes, add milk or sour cream, salt and stir.
Step 4
Use the palm of your hand to knead the dough into a flat cake 7-10 mm thick. Put a lump of filling in the middle, smooth it out. Then, taking the ends of the dough, pull them in the middle, connect and pinch.
Step 5
Smooth the surface of the pie, kneading it so that you get a round cake of even thickness. Make a notch in the top in the middle for steam to escape. Bake the pie in an oven preheated to 200 ° C for 15–20 minutes. Remove from oven and brush immediately with oil.
