Ingredients
  • milk - 1 liter
  • sugar - 80 g
  • salt - 10 g
  • butter - 65 g
  • vegetable oil - 50 ml
  • eggs - 3 pcs.
  • flour - 400 g
  • frozen cranberries - 200 g
  • sugar - 100 g
  • butter - 20 g
  • apple - 1 pc.
  • sugar - 10 g
  • goose - 1 pc. (2-2.5 kg)
  • pears - 300 g
  • apples - 300 g
  • salt - 10 g
  • pepper - 5 g
  • cinnamon - 2 sticks
  • cloves - 4 buds

STEP-BY-STEP COOKING RECIPE

Step 1
Prepare the goose marinade. Chop apples and pears and remove the cores. Combine all the ingredients for the marinade by crumbling the cinnamon. Marinate the goose in the marinade for 24 hours.
Step 2
Prepare pancakes. Heat the milk by adding salt, sugar (80 g), melted butter (50 g) and vegetable oil. To stir thoroughly. When the milk is warm, remove from heat, add eggs. Stirring, add flour in 3 passes. Strain the dough and bake the pancakes, frying them only on one side.
Step 3
Make jam. Put cranberries and sugar (100 g) in a saucepan and boil for 15–20 minutes. Cool down.
Step 4
Caramelize the apple. Peel the apple, cut into wedges. Melt butter (20 g) in a frying pan and fry the apple with added sugar (10 g) for 5-7 minutes.
Step 5
Fry the marinated goose on all sides in a frying pan without oil. Fry the pears and apples from the marinade in the fat drained into the pan after frying the goose.
Step 6
Put the goose and fried apples and pears in one container and pour 2/3 of the goose with water or broth. Put to stew in the oven, preheated to 180 degrees, for 2-2.5 hours.
Step 7
Cool the finished goose and completely disassemble, separating the meat from bones, fat and skin.
Step 8
Strain the remaining stewing liquid and boil it down to 50-100 ml. Mix the resulting sauce with the goose meat.
Step 9
Put the pancake upside down, put the filling on it and wrap it in a rectangular envelope, like a cabbage roll. Fry the pancake on all sides in butter (15 g). Serve with cranberry jam and caramelized apple.
