Profiteroles with mascarpone and dark chocolate

For profiteroles with orange cream, you can make custard "buns" yourself. We suggest using ready-made ones - to save time.

Profiteroles with mascarpone and dark chocolate
Ingredients
  • 200 g cream (33-38%)
  • 1 orange
  • 250 g mascarpone
  • 2 tbsp. l. cognac, rum or whiskey
  • 1 basic serving of ready-made profiteroles
  • 100 g bitter (from 70% cocoa) chocolate
  • powdered sugar

STEP-BY-STEP COOKING RECIPE

Step 1
Whisk in very cold cream until fluffy. Add orange zest (leave a little for garnish).
Step 2
Mix the mascarpone with cognac and orange juice. Gently add a third of the whipped cream into the mixture, stirring with a spatula from bottom to top. Then add the second third of the cream and finally the third.
Step 3
Fill the profiteroles with orange cream.
Step 4
For the sauce, melt the chocolate in a water bath, add 6 tbsp. l. hot water, stir well. Pour the sauce over the profiteroles, sprinkle them with powdered sugar, garnish with orange peel.
