Roast pork with potatoes and tomato sauce
Roast is the only dish that has a title of nobility. And it owes such an honor to the English king Charles II. Having tasted the pork roast, he was so amazed at its excellent taste that he immediately got up from his chair, took the sword and, touching the plate, assigned the title to the roast.
Ingredients
- pork tenderloin (pieces) 300 g
- bay leaf 1 pc.
- ground coriander 1 tsp
- tomato paste 20 g
- potatoes 550 g
- onion 1 pc.
- carrots 1 pc.
- tomatoes 1 pc.
- garlic (cloves) 2 pcs.
- parsley (twigs) 2 pcs.
STEP-BY-STEP COOKING RECIPE
Step 1
Chop the onion finely. Chop the garlic finely. Peel the potatoes and carrots and cut into 1–2 cm cubes. Cut the tomatoes into slices.
Step 2
Preheat a skillet with a drop of vegetable oil. Place the meat in the skillet. Roast pork for 1-2 minutes. over high heat. Add onion and garlic. Cook for another 2 minutes, stirring occasionally. Add tomato paste. Warm up for 1 minute. over medium heat. Add potatoes and carrots. Add bay leaf and coriander. Pour in 100 ml of boiling water (this is the volume of about half a glass). Cover with a lid. Simmer for 20-30 minutes. over low heat. If you want the meat to be more tender, simmer for 25-30 minutes. To make the potatoes soft, simmer for 15-20 minutes. Top up with boiling water if necessary. Add chopped tomatoes at the very end. Season with salt and pepper. Serve immediately, sprinkled with chopped parsley.
