Tava-burger

Tava-kyufta in translation from Armenian means "kyufta cooked in a pan". That is, the cutlet in this burger is made according to the same rules as the kyufta: the minced meat is whipped for it by hand, beats on the board for a long time, and the kyufta becomes tender and airy, almost like a souffle. In addition to the cutlet, we take tsitsak pepper, fresh tomato, adjika and sauce based on sour cream and cilantro.

Ingredients
  • beef for minced meat - 400 g
  • rye or white burger bun - 4 pcs.
  • pickled tsitsak (or ordinary pickled red hot pepper) - 120 g
  • adjika - 160 g
  • sour cream - 40 g
  • quince - 40 g
  • lettuce - 20 g
  • tomatoes - 240 g

STEP-BY-STEP COOKING RECIPE

Step 1
Turn the beef through a meat grinder, beat the minced meat with your hands, throwing it with force on the board.
Step 2
Make 4 cutlets from minced meat and fry on both sides until tender.
Step 3
Next, take the marinated tsitsak pepper, cut into small pieces, add adjika, a little sour cream and cilantro.
Step 4
On the bottom of the roll, put the lettuce, the prepared marinated tsitsak sauce, then the tomatoes and the cutlet on top.
