Cherry in chocolate jam

Cherry tolerates freezing well: its velvety, sweet and sour taste only gets stronger from frost. We decided to fantasize a little and came up with a jam with the taste of everyone's favorite "Black Forest" cake - cherries and chocolate in it form a perfect match. Such beauty is quite self-sufficient, except for a crystal vase and a cup of tea. But if you are thinking of baking a birthday sponge cake, use jam to sandwich the cakes. It will turn out gorgeous!

Cherry in chocolate jam
Ingredients
  • 750 g pitted frozen cherries
  • 400 g of sugar
  • 1/2 vanilla pod
  • 1 tbsp. l. cocoa
  • 70g dark chocolate (from 70% cocoa)
  • 1/2 lemon juice

STEP-BY-STEP COOKING RECIPE

Step 1
Rinse frozen berries with cold water, add to a saucepan (bowl) and cover with sugar. When the berries melt and begin to produce juice, and the sand gets wet and colored, start cooking.
Step 2
Bring the berries to a boil over low heat. Remove the foam. Add vanilla, cocoa and let the jam simmer for 20-30 minutes over medium heat, stirring and skimming.
Step 3
Chop the chocolate into small pieces with a knife. Remove the jam from the heat, stir in the lemon juice, then the chocolate and, stirring occasionally, let it melt.
Step 4
Let the jam cool, put in jars and store in the refrigerator.
