Marbled beef tartare with wasabi sauce
Ingredients
  • beef tenderloin - 120 gr
  • croutons - 10 gr
  • red onion - 10 gr
  • olive oil - 20 gr
  • pickled cucumber - 60 gr
  • parsley - 2 gr
  • watercress - 5 gr
  • salt to taste
  • Wasabi sauce - to taste
  • soy sauce - 5 gr
  • ground pepper - to taste
  • quail egg - 2 pieces

STEP-BY-STEP COOKING RECIPE

Step 1
Rinse the beef tenderloin under running water and pat dry with a towel, then chop finely. Chop the pickled cucumbers and red onion also finely. Mix the chopped ingredients in a bowl until smooth.
Step 2
Chop the parsley finely and add it to the meat mixture along with salt, pepper, soy sauce and wasabi sauce. Stir.
Step 3
Place the beef tartare in a bowl and garnish with watercress.
Step 4
Put the bowl on a plate, and put the quail egg yolk next to it. Add Wasabi sauce to the yolk to taste.
Step 5
Add croutons to the tartar and serve.
