Olivier with roast beef

To prepare Olivier not just with boiled beef tongue or ham, but with smoked roast beef - for this the guests will carry you in their arms! And the decoration for this festive salad will be green cucumber jelly, which is not at all difficult to prepare at home.

Ingredients
  • roast beef - 150 g
  • boiled potatoes - 160 g
  • boiled carrots - 60 g
  • boiled egg - 4 pcs.
  • canned peas - 100 g
  • green onions - 25 g
  • borodino bread - 200 g
  • yolks - 3 pcs.
  • sugar - 15 g
  • salt - 2 g
  • table mustard - 10 g
  • vegetable oil - 220 ml
  • table vinegar - 20 ml
  • gelatin - 1.2 g
  • cucumber juice - 40 g
  • salt - a pinch

STEP-BY-STEP COOKING RECIPE

Step 1
Make cucumber jelly. In a water bath, add diluted gelatin in freshly squeezed cucumber juice, add a little salt. Try to shape the jelly into a cucumber shape by pouring it into a suitable shape. When it hardens, cut into slices like a cucumber.
Step 2
Prepare homemade mayonnaise. Mix the yolks with sugar, salt and mustard. While continuing to mix, gently add the vegetable oil a little at a time. At the end of mixing add vinegar and stir.
Step 3
Cut the roast beef, potatoes, carrots and egg into small cubes. Add green peas and season with homemade mayonnaise.
Step 4
Decorate the cucumber jelly salad. Serve with green onion feathers and Borodino bread.
