Seasonal salad with cheese, fennel, grapes, strawberries and nuts
Strawberries in this salad can be substituted with any seasonal fruit, and cheese with camembert or brie. The main thing in it is not to forget about the seasonal greens. Use wild garlic actively, it perfectly complements the sweetness of the berries and the spicy taste of fennel.
Ingredients
- 1 large head of fennel
- 300 g strawberries (savory possible)
- 300 g seedless white grapes
- 120 g walnuts
- 300 g of seasonal greens (spinach, wild garlic, sorrel, whitewash, quinoa, oxalis, etc.)
- 500 g of young cheese (Adyghe, Suluguni, Ossetian, etc.)
- 100 ml orange juice
- 2 tbsp. l. mustard seeds
- 2 st. l. Teddy bear
- 3 tbsp. l. apple cider vinegar
- 120 ml extra virgin olive oil
- salt, freshly ground black pepper
STEP-BY-STEP COOKING RECIPE
Step 1
Put all the ingredients of the dressing in a jar with a tight-fitting lid and stir. Close. Whisk the dressing vigorously before serving.
Step 2
Cut the fennel into very thin slices and place in ice water for about 15 minutes, then dry thoroughly.
Step 3
Cut the strawberries and grapes into halves (if the strawberries are large, use smaller slices). Chop the nuts coarsely.
Step 4
Pull the greens into easy-to-eat slices, mix with fennel, strawberries and grapes, and arrange on plates. Sprinkle with crumbled cheese, sprinkle with dressing, sprinkle with nuts.
