Vanilla meringue on aquafaba
The meringue on aquafaba turns out to be dry and harsh, there is no wet "toffee" inside it, which some fans of this sweet dessert love so much. Otherwise, you can experiment with it in the same way as with a traditional meringue, adding nuts or chocolate. And it keeps its shape perfectly, so bake small meringues and decorate cakes, pies and pastries.
Ingredients
- 150 ml of aquafab
- 100 g icing sugar
- seeds 1/3 vanilla pod
- salt to taste
STEP-BY-STEP COOKING RECIPE
Step 1
Using a mixer on medium speed, beat the aquafaba with a small pinch of salt until soft peaks. Gradually (in portions), without stopping whisking, add sugar and vanilla. Beat until thick and glossy.
Step 2
Transfer to a pastry bag and place the meringue on a baking sheet lined with baking paper at some distance from each other. Bake in an oven preheated to 110 ° C for 60-70 minutes. Leave the finished meringue first in the turned off oven (with the door ajar 5-6 cm) for 20-30 minutes, and then transfer to the wire rack until it cools completely.
