Fried eggs with fried suluguni

Fried eggs are perhaps the most popular breakfast dish. Mamiya Jojua, the chef of the Kazbek restaurant, offers a version of fried eggs with a Georgian scale - with beef tenderloin, bacon and suluguni cheese.

Ingredients
  • chicken egg - 4 pieces
  • sunflower oil - 30 ml
  • suluguni - 2 pieces 50 g each
  • tomato sauce or ketchup - 50 g
  • red basil - 2 sprigs
  • thin slices of bacon - 60 g
  • beef tenderloin - 2 pieces of 30 g
  • corn flour 30 g
  • 1 egg
  • refined vegetable oil

STEP-BY-STEP COOKING RECIPE

Step 1
Heat a frying pan, add sunflower oil and fry with plain eggs.
Step 2
Divide the beef tenderloin into 3 pieces (10 g each), wrap each piece with bacon, secure with a toothpick and fry until golden brown in a pan.
Step 3
Shake the breading egg in a small bowl. Pour cornmeal into a flat plate. Dip a piece of suluguni in an egg, then roll in flour and deep-fry until golden brown.
Step 4
Put scrambled eggs on a plate, top with bacon-wrapped beef tenderloin and suluguni cheese, pour over tomato sauce and garnish with red basil leaves.
